豚珍館 ラーメン tonchin-kan ramen

本来は、かぐやのラーメンを・・・と思いながら出かけましたが・・・・あいにく休み
という事で　豚珍館で

白こってりラーメンをオーダー
白・・？？？？何と思いましたが、塩です。
塩に背油がこってりと！

さてスープを少し塩が立ってますかね！
ラーメンのスープを味わうには、塩といいますが、これが豚珍館の実力なのかもしれませんね。
味噌・醤油は、その風味でスープの味をごまかせますね！

でもマヅイわけではありません！実力はありますが、いまひとつ・・・何かが足りない。
塩を変えるのがいいか、円やかになるぞ材を何か加えると塩の味がよくなると思います。

家でのねぎ味噌キムチラーメンです。

ここでのキムチの味の要求は、酸味が少ない事！さらに甘みも少ないこと！これ抜きには、
キムチトッピングは語れない。


酸味・甘み（砂糖）は、せっかくのラーメンの風味・味を損ねる！

今回は、野菜炒め系キムチトッピング・・・前置きにねぎ・・・？？？を書きながらねぎなしかよ！
と思いますが、それは置いておいて、味噌ラーメンのキムチ（条件付ですよ！）は、すごくマッチングがいい。

キムチは、いろいろなところで購入しましたでも、自分の”条件付ですよ！”のキムチは、業務スーパーのやつ！安くて？？？と思ってましたが、これ以上のスーパー系でのキムチは、会った事がない。
